My vegetarian Mexican style brown rice casserole is the answer to vegetarians or vegan people when I’m frequently asked what would be a great meal to entertain meat-eaters, or something different on a meatless Monday.
You see: this vegetarian Mexican style brown rice casserole dish has been through the test of time, no one actually missed the meat at all. I have lost count of how many compliments I receive at a potluck party. So, you could say it’s a crowd-pleaser alright.
There’s no surprise the next thing is that I am asked to give people this recipe so they can reproduce it themselves.
Full of yummy flavors and rich in proteins, and the cost of making this meal is so affordable, this could be your go-to whole food plant-based healthy meal that can come up over and over again in your meal planning.
You could do this healthy brown rice casserole from the scratch, I mean to boil the dry black beans, sauté all the veggies, boil the brown rice, etc.; but I have decided to give you a time-saving version. It’s really not hard at all to put together this meal in under 30 minutes.

Here’s the list of ingredients and the steps to make them:
Preparation: 10 minutes Baking time: 15 minutes Serves: 4
Ingredients: (serves 4)
2 cups cooked brown rice
1 tin black beans, rinsed and drained
1 tin corn kernels, drained (or 1 cup of sweet corn, fresh or frozen)
1 tin tomato (I use the whole tomato that I diced roughly, you could use a tin of crushed tomato to save time)
1/2 teaspoon smoked paprika
1 teaspoon sugar
Pinch of salt (I used my homemade rosemary salt, about 1 teaspoon)
1/4 cup shredded cheese (for vegans, use vegan cheese)
Optional: you could add broccoli, cauliflower, or zucchini cut in small pieces, diced onions or capsicums, frozen peas, finely chopped celery or carrots, and herbs such as thyme, oregano, basil, and chili flakes if you like it spicy.
Method:
- Preheat oven to 190°C.
- In a frypan, add veggies, black beans, corns, tomato and warm them over medium heat until all veggies are softened.
- Add brown rice and mix in herbs and seasonings. Stir to combine well.
- Turn off the heat. Transfer brown rice mixture into a Pyrex dish (I used a 4-cups dish). Use a spoon to smooth the rice mixture. Add shredded cheese evenly.
- Bake in the oven for 15 minutes or until cheese has turned golden brown. Serve immediately with your favorite green salad, or a dollop of guacamole.
